Planning tips

Start earlier than you think. For 50+ guests, the conventional wisdom of "start 2 hours before" is wrong. Reducing a large pepper base alone takes 30-40 minutes per pot. Add rice cook time, and you need 4-5 hours for 100 guests.

More pots, not bigger pots. A 60 cm pot is not twice as good as a 30 cm pot. It loses heat control and produces uneven cooking. Two 36 cm pots are better than one 60 cm pot.

The cooks-to-pots ratio. Each cook can manage 2 pots comfortably, 3 in a pinch. Beyond 3 active pots per cook, something gets burnt. Budget for enough hands.

Protein quantities. The default is 180 g raw protein per guest. Reduce to 150 g if serving multiple proteins (chicken + beef) or if sides are substantial.
