When the tomato base is fully reduced and the oil has separated — the moment just before you add stock — remove the pot from heat for 30 seconds. Stir in exactly one tablespoon of natural groundnut paste. Return to medium heat and stir vigorously for 60 seconds until the paste is completely dissolved and invisible. Then add stock and rice as normal.

Why it works

Groundnut paste at this concentration and at this stage of the cook dissolves into the oil layer rather than the water layer, because the oil has separated and sits on top of the base. The groundnut fat binds with the cooking oil and distributes the paste's glutamates and aromatic compounds (pyrazines from the roasting) throughout the fat layer. These then coat the rice during the sealed cook. At one tablespoon per pot, the result reads as "deeper tomato" rather than "peanut."
